Easy Crock Pot Vegetable Beef Soup Recipe + Wine Pairing

 

 March is the beginning of Spring and in many parts of the country it's still cold and rainy. We know families are looking for hearty, warm and easy meal ideas. Ya Ya's Vegetable Beef Soup definitely checks all the boxes. 
 
Beef soup also reminds us of St. Patrick's Day. Besides Shepherd's Pie and Corn Beef, our grandma would make the best vegetable beef soup. We would love to come over our grandma's house in the spring time and eat a bowl of soup. Grandma doesn't cook much lately but we sure wish she would make us some of her soup!! She always used okra in her recipe.

Vegetable beef soup is very versatile and pairs well with several wines. 
We selected 3 wines for different palates.
1. Jack Canyon Malbec - This full bodied, earthy, big fruit wine pairs well with beef. Jack Canyon comes out of the state of Washington and we enjoy the red berry joined with black fruit. You can also add the Malbec in the soup for a richer flavor. Shop Now
 
2. Cucharon Red Blend - A blend of 3 grapes - Malbec, Petite Verdot, and Tannat from Argentina. We absolutely love this wine and the notes of blackberry over anise smells so good! We could literally sniff it all day! The taste of black fruits over herbs pairs well with pot roast and beef stew. Shop Now

3. Hoot White Blend - A Crisp white blend with notes of lemon, lime with herbs and mineral flavors. An explosion of taste, rich in flavors that finish smooth. White wine goes with more than just chicken and fish. Hoot White Blend out of California pairs delightful with pulled pork, barbeque, and beef.

What You Need

1 pound of frozen Pictsweet farm vegetable for soup 
(or any frozen vegetable soup blend)
2 boxes of vegetable broth (the 32 oz boxes)

1 1/2 lb stew beef lean meat 

Seasonings..

Korean BBQ rub
 1 Tablespoon 

Red hot Riplet Seasoning
  1 Tablespoon 
(Red Hot Riplet Seasoning is a smoky and spicy barbeque seasoning out of St. Louis. We literally put it on everything. You can order it online, it's a must try! If you do not have this seasoning, use a smoky & spicy BBQ seasoning) 

Parsley
1/2 teaspoon 

Ground Cumin
1/2 teaspoon 

Black Pepper 
Pinch 

Minced Garlic 
1 Tablespoon 
 
Olive Oil
1 Tablespoon 

Frying Pan
Crock-Pot
 
Instructions
In a frying pan heat oil 
Next add 
Garlic
Stew meat
Korean BBQ seasoning 
Red hot Riplet seasoning 
Parsely 
Ground cumin 
Black pepper 
Cook until browned

Place the seasoned cooked meat in the crock pot
Now add
Vegetable broth
Frozen vegetables 
Cook for 3 hours on high until meat is tender 

- Add additional salt if needed -
