Riesling Pairing - Spicy Buffalo Chicken Lettuce Wraps

Riesling has a colorful German heritage! It's considered the most collectible white wine in the world!

A Few Quick Facts
1.    Riesling grapes birthplace is in the Alsace Region in France but most acres are now produced in Germany
2.    Riesling grapes date back to the 1500s
3.    Best Rieslings grow along the Mosel River in Germany - steep south facing slope
4.    Also grown in Australia, U.S. (Washington, Oregon, California), France Alsace region, Austria, New Zealand
5.    Traditionally Riesling are sweet but now winemakers are producing bone dry and off dry Riesling.
6.    High Acidity close to lemonade
7.    Rarely blended with other grapes but there are blends, for example ( Liebfraumilch).
8.    Color: Pale to deep yellow
9.    Temperature: Serve at 43 degrees

We paired a 2018 Dr. Loosen Bros Riesling with a Spicy Buffalo Chicken Lettuce Wrap

The German Riesling is clean & crisp with notes of white peach, granny smith apples, pears, lemon zest, and stone fruits.

You will see 2 versions of the chicken. If you don't like spice we omitted the sauce and mixed with feta cheese instead of blue cheese.

Recipe
- Cut chicken breasts (1 pound)
- Dip in Flour (1 cup)
- Dip in Eggs (3 eggs)
- Dip in Planko crumbs (1 1/2 cup)
Bake for 30 minutes at 350 degrees

Prepare Sauce
In a sauce pan
- Melt Butter (1/2 cup)
- Add hot sauce (1 cup)
- 1 tsp pepper
- 1 Tbsp honey
Simmer until thickened

Sour cream sauce to add to wrap once everything is assembled
- Sour cream (1/2 cup)
- Mayo (1/2 cup)
- lemon (1 Tbsp)
- 1 tsp pepper
- 1 tsp salt
- Blue cheese (1/2 cup)
- optional add celery and green onions as a topper-
